It’s about a quarter of the world-wide annual protein consumption from plant are wheat proteins. Well celiac patients are intolerant to wheat low molecular weight (LMW) glutenins and gliadins, and they need to avoid the intake of wheat flour from diet. Ph.D Shanshan Wen tried to eliminate LMW glutenins and gliadins’ expressions by regulating the key factor of 5-methylcytosine DNA glycosylases in the endosperm. This led up to more than 75% decrease of the total protein contents of the two relevant protein families in some lines, which provide a new way for engineering safe wheat variety for celiac patients.
